We didn’t wait for permission. In 2009, with a 40-liter setup and a stubborn idea, we started brewing beer we couldn’t find anywhere else. By 2010, our operation lived in a basement on the edge of Mexico City — small, scrappy, and obsessed with flavor. Escollo was never just about beer. It’s about doing things our way. Staying fresh. Staying free. Staying independent in a world that keeps trying to buy you out. We brew what we believe in: beers with backbone.
